The dumpling boss among South Tyrolean cyclists

Johannes von Klebelsberg is actually known for tackling spectacular descents at high speed on his downhill bike. Bronze at the European Championships or gold at the Italian Championships – these are just a few of the successes that von Klebelsberg has achieved. The 23-year-old has recently also been working in a different profession: he runs a restaurant in Munich's Gärtnerplatzviertel called “Fink's Südtiroler Knödelküche”.

“The idea for this came from my older brother Valentin. He has been running the Fink restaurant in Bolzano for a long time and therefore has experience in this area,” explains Johannes. “In our opinion, the dumpling is more than just a side dish, which is why we offer our customers a wide variety of variations as main courses.” In any case, the slightly different restaurant is well received by the guests. “We are fully booked every evening,” says von Klebelsberg happily. The cyclist himself is responsible for the management and is therefore deployed everywhere from “A to Z”. “Whether in the kitchen, shopping, in the bar or in service: the range of tasks is complex. But contact with customers is also important,” says von Klebelsberg.

But how can such a job be reconciled with downhill sport? “We found a cool solution. I always alternate between a week in Munich and a week in South Tyrol. In Munich I train in doses and only on a few days, but in South Tyrol the program is very intensive. This way I can prepare well for the World Cup, which starts in a month.”

Klebelsberg has no fixed sporting goals. “I just want to have a lot of fun while downhilling. “I don’t think about results,” said the slightly different cyclist.
